I'd make a Star Wars land in Disney Hollywood Studios. I have ideas for a shop, two restaurants and three new rides. First, dining options include Mos Eisley Cantina and Dexter's Diner. Mos Eisley would serve alcoholic and non-alcoholic drinks and lighter fare like tapas. Dexter's Diner would serve diner food. Both would be themed like the movies and provide unique dining experiences. A Star Trader shop rethemed to a Tatooine trading post is the main shopping experience. One of the three new rides is an indoor, dueling coaster where you can choose Han Solo or Boba Fett. So it'd be a duel between the Millenium Falcon and Slave 1. Another ride allows you to experience the thrill of riding a speeder bike through vistas such as the forests of Endor or the deserts of Tatooine on a secret mission for Darth Vader. Why? Because bad guys ride bikes in Star Wars (Stormtroopers, Anakin, Darth Maul). This ride also incorporates blasters, so you can score points by hitting targets on the screen. The last ride is a 3D escape type ride. The Empire has attacked your rebel outpost and you must escape with "plans vital to the survival of the Rebellion, which are contained in this..." to the nearest transport. Of course, it is always on the far side of the base. Finally, the land will still have Jedi Academy and Star Tours II.
