St. Patrick's Day fish recipe from Downtown Disney

March 17, 2011, 11:11 AM · For your requisite St. Patrick's Day commemoration, here's a video from Master Chef Kevin Dundon at Raglan Road in Downtown Disney at the Walt Disney World Resort. He's making "Smokie City," one of the Irish-themed restaurant's signature dishes, which features smoked haddock in a creamy cheese sauce.

Yeah, that's a cholesterol bomb there, but I'm happy to see a St. Patrick's Day dish that doesn't involve the same old tired corned beef.

Anyone celebrating today?

March 18, 2011 at 6:13 AM · What we should remember is that corned beef and cabbage, while an Irish staple, is the Americanized version of the traditional St. Pat's meal. The traditional meal in the Auld Sod is ham and boiled potatoes.

And I wore no green yesterday...real Irishmen don't need to!

March 19, 2011 at 2:59 PM · St. Patty's is bittersweet. Living in a college town, I really don't have the option to not celebrate it. The town is packed full of green-clad students and locals alike, and although I love any excuse to blow off school/work and enjoy some Smithwick's in the sun, I find the day celebrates very little of the Irish. People were drinking cheap Canadian wheat beers rather than Irish stouts, barbecuing burgers rather than frying fish, and listening to club music rather than Celtic. Every bar was packed full of cheap green party favours, but very few served even the most popular Irish beers, nor did they serve Irish whiskeys, nor did they even attempt to play even remotely Irish music. Hell, I even would have taken House of Pain over the garbage we heard.

So how do we celebrate our Irish heritage? By getting drunk, skipping work, and acting like yahoos. Fun, yes, but I die a little inside every year.

Still, I have some traditions I love to celebrate alone. I always start the day with the classic prohibition episode of The Simpsons, Homer Vs. The Eighteenth Amendment. I then proceed to crack a Smithwick's and enjoy some Stan Rogers.
