Obviously, all of California Adventure is new in the past 10 years. At Disneyland itself, here is what is new or significantly revamped:
The Many Adventures of Winnie the Pooh
Tom Sawyer's Island
Pirates of the Caribbean
Space Mountain
Finding Nemo: Submarine Voyage
Buzz Lightyear Astro Blasters
Autopia

The must-sees are:
Finding Nemo: Submarine Voyage
Buzz Lightyear Astro Blasters
Pirates of the Caribbean
Space Mountain

The if-you-are-inclined:
Tom Sawyer's Island
Autopia

And only when you've done everything else:
The Many Adventures of Winnie the Pooh

Hope this helps. Have a great time!

Oh, I forgot. In December, the Haunted Mansion Holiday is definitely a must-see! Put that at the top of the list.

The Holiday Haunted Mansion goes from October through New Years. It's great for fans of the "Nightmare Before Christmas" movie. I enjoyed seeing how they’d changed the original to suit the movie’s story and characters (and music) It was fun the first couple of times, but I found that I soon missed the original. For hard-core park fans, the Holiday version's a must-see, but the original's always going to be better. NOTE OF INTEREST: The updates to the attic provide a new story line. I liked the original story line better as it was more realistic and tragic. It was a story of true love turned to murder which finally ended in suicide. That’s a great reason for spirits of the departed to inhabit a place. The new story's cool, but more generically "evil". Having said that, the new version provides the opportunity for some new special effects. Check out the bride and groom in the wedding photos. OOOOOOOOH! DON'T MESS WITH HER!!!

Anthony's pretty much landed most of the rides i was going to suggest. other from that fantastic list, you should try:

1)Finding Nemo: Submarine Voyage (tip: go on this ride FIRST and as much as possible near the time the park opens. the line can get extremely long in a short amount of time)

2)small world during the holidays (better at night)
